in a pan, heat 1/2 table spoon butter, add cashews, let them roast then immediately, add diced tomato, onion, ginger,,garlic, green chilies and saute this. Add 1 big black ilaichi and 1 small Bay leave. Add little bit ketchup or market tomato puree for color. Saute it for 8-10 minutes, let it cool and blend it into paste.
I generally add some hot water and strain this so get a smooth clear paste for our sahi paneer curry. keep this past aside.
Now in another pan, add 1 tea spoon oil and add turmeric, red chili, 1 tea spoon cinnamon powder/stick and add our tomato paste. Bring it to 1 boil, add 2/3 table spoon heavy cream and 1 table spoon butter, simmer it.
Add our cubed paneer, and mix and cover & let it cook on low flame for 2/3 minutes and turn off heat and let it settle for 5/10 minutes.
While serving, put little butter & heavy cream on top & serve this with butter naan/jeera rice with some cut lemon & onion sliced to enjoy??
